Week 7 in Durango

Week 7 has come and gone very quickly, with the holiday weekend and my parents arriving in Colorado. We are going back to Houston in one week from today – I am so ready to hug (i.e. squeeze to death) my friends, but so sad to leave this gorgeous weather and valuable family time.

In the past week, we hiked up to Fort Lewis College every morning, tried a new restaurant (Chimayo – amazing and will definitely be on my updated Durango Travel Guide), went to the Saturday farmer’s market (delicious hatch peppers and tasty wheat grass drinks!), made some crepe paper peonies (DIY here), baked more vegan black bean brownies as well as these amazing and healthy cookies, ate even more Cream Bean Berry, watched Isla play with her ‘Mimi’ and ‘Papa’, dominated my parents in Taboo, and practiced playing bean bag toss (I’m awful). The only low point of the week was getting stung by a wasp twice (in my hand and leg) – totally unprovoked on my end! Not fun.

Lastly, I recently set up a Facebook page and Instagram account for Snapshots & My Thoughts. I would love if you were to follow along so I can follow you too! Thanks for reading. xoxo

What an incredible weekend. We arrived at Ft. Lauderdale airport Friday afternoon and spent the remainder of the day on the beach – drinking Acai Mojitos (consumed far too many…). We ate at Hollywood Prime, then headed to the Justin Timberlake and Jay Z Legends of the Summer concert. It was honestly the best concert I’ve ever been to, by leaps and bounds. It was at Sun Life Stadium in Miami, which is uncovered, so we were super hot (thank goodness I chose a black romper – nice and breezy), but danced like fools the entire night. The set list for the concert is here. Could you pick a better compilation of songs? We slept in on Saturday, then lounged at the pool all day (handstand contests for hours), then showered and met Sasha’s cousins for dinner at Sardellis. I got the burrata salad (which we had at the wedding), and I haven’t stopped thinking about it since. Sunday was a relaxed morning – we headed to the airport in the late morning. It was truly the perfect beach getaway weekend.

New Houston Favorite: Adair Kitchen

I was meeting two of my best friends for lunch last weekend, and asked my sister where we should eat near the Galleria, since I don’t know that area very well. She suggested Adair Kitchen, and when I told Patrick and Paola, Pat replied, “Oh, my friend owns that.” Huh? Yup, his fraternity brother, Nick Adair, is a co-owner of this delicious new Houston restaurant, located on San Felipe near Sage Rd. I checked out the lunch menu, saw the words “Black Bean Quinoa Burger” and was sold. Most restaurants’ vegetarian options are boring, but that caught my attention. And let me tell you, it did not disappoint. The setup and decor of the restaurant is gorgeous as well – great lighting, minimalistic but welcoming, and the perfect amount of white. The fonts are amazing – American Typewriter and Despeinada for the menus (yes, I’m a typography nerd). We loved it so much that we ate there again on Thursday night for dinner – this time with McKenzie, who was equally pleased. We had the baked brie to start (melt in your mouth tasty), and I tried the Kale and Quinoa salad – yummm. Looks like I’ve got a new go-to restaurant. Go and try it for yourself!
